Chicken soup is so comforting when you are tired, sick or even just too busy to cook. Soup is always a good option for dinner or even for a quick homeschooling day lunch. My favorite chicken soup recipe involves using a roasted chicken, but sometimes we just need an easy dump chicken soup recipe.
It never seems to fail that when I am sick, I mean really sick, too sick to have the energy to do anything, the only thing that sounds good to me is chicken soup. But I don’t have any energy to actually make it! My husband doesn’t do too much for cooking so I am out of luck lol. I created this so my husband, one of my older children or even I could muster up the strength to get off the couch for five minutes and dump a few ingredients into the instant pot and push start (or the crockpot) and we have some delicious comforting soup. Also be great backup for the days I just don’t have time or energy to cook. We can have a favorite meal ready with very little effort.

This recipe can be cooked several ways, just the length of time is what will vary. You can cook it on the stovetop, or what I would suggest with a sick household is in a crockpot or instant pot. Then you can truly dump the ingredients and walk away.

- Crockpot Instructions:Place chicken, carrots, celery, onion, garlic, seasonings, and broth into the crockpot.Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken and veggies are tender.Remove chicken, shred with forks, and return to the pot.Optional: If adding rice, stir in 1 cup uncooked rice and cook on high for 20–25 minutes, until tender.Optional: If adding noodles, stir in 2 cups noodles during the last 20 minutes of cooking. Gluten free cook quicker, watch it closely or it turns to mush! I have had the most success with brown rice or chickpea pasta.Taste and adjust salt/pepper before serving.
- Instant Pot Instructions:Place chicken, carrots, celery, onion, garlic, seasonings, and broth into the Instant Pot.Seal lid and cook on Manual/Pressure Cook for 12 minutes (15 min if using frozen chicken).Quick-release or natural release depending on time.Remove chicken, shred, and return to the pot.Optional rice: Set Instant Pot to Sauté, stir in 1 cup rice, cover, and simmer 15–20 minutes until rice is cooked.Optional noodles: Stir in noodles and cook on Sauté for 8–10 minutes until tender. If gluten free noodles, watch them closely they tend to cook quicker and turn to mush if you aren't careful. I've had the best results with brown rice pasta and chickpea pasta. Taste and adjust seasoning.

You can also cook the soup with the rice (brown rice seems to hold up the best) or noodles (both regular and gluten free work). Or they can be cooked on the side, it’s your choice and preference! Some fresh fruit, even canned peaches or applesauce and crackers are some other ideas.
